  • 1/2 kilo of tangerines
  • Grated peel of a tangerine
  • The juice of 1/2 lemon
  • 1 1/4 cup organic sugar (250 g)

Preparation

  • First, peel all the mandarins and keep one of the peels to get the zest.
  • Then remove the white skin covering the segments, then the small seeds.
  • After preparing all the mandarin segments, put them in a saucepan over medium heat and also add the lemon juice and the grated skin.
  • If you deem it necessary, then add a little water so that the segments melt during cooking.
  • If you still add water to the mixture, put them in a blender until you get a finer paste.
  • Once you get the desired texture, gradually stir in the organic sugar.
  • Then lower the heat and stir constantly with a wooden or silicone utensil.
  • Cooking can take between 25 and 30 minutes maximum  to prevent the contents from sticking.
